Ishikari Nabé(Ishikari Nabé,du nom de la rivière(石狩川, Ishikari-gawa) qui se trouve à Hokkaido dans laquelle les saumon remontent ,recette en anglais (désolé surtout pour Shizukasan)
Ishikari nabe
Ishikari is a town near Sapporo. Ishikari is situated on the west of Hokkaido. Ishikari-nabe is a very popular dish in Hokkaido. Firstly, soup nabe was fishermen's dish. They caught salmon from Ishikari River. That's why the dish is called "Ishikari-nabe". Another name of this dish is tokachi-nabe.
Ingredients (4 servings):
500 g of salmon
1/2 Daikon
4 pc of potato
1 carrot
1 onion
5 tbsp miso
2 tbsp soy sauce
Sugar - to your taste
3 tbsp butter
Broth:
Mushrooms or sea kale - to your taste
Water - to your taste
2 tbsp sake
3 tbsp sugar
4 tbsp soy sauce
1 tbsp mirin 1 tsp salt
Preparation:
1. Cut salmon into chunks, fill up with hot water and boil it.
2. Peel potato, cut into 2-4 pieces and boil it.
3. Cut daikon (1 cm thick), carrot (7 mm thick) and an onion.
4. Put vegetables in a clay pan, fill up with the broth and boil. When vegetables are ready, add salmon.
5. When vegetables and salmon are ready, add sugar, soy sauce and miso and boil it for several minutes. At the end add butter and sprinkle with leek.
